Prawn and Garlic Pasta

It’s been a great year filled with a lot of emotions, sacrifices and new beginnings; could not have a better ending without fresh pasta eh!

My love for fresh pasta developed back during my high school days when I first made it and I was so amazed by how simple it was to prepare and how ‘yummylicious’ it turned out to be. It is a mélange of simple ingredients. It can be surely time consuming but the end product is simply worth it.

On this New Year, it’s about expressing how grateful you are for having your loved ones and the best way to show that is to have a home made meal prepared; full of love and passion. New year is not only about the one complete orbit that the earth takes around the sun but also about the 365 chances to be a better version of yourself. I hope that 2019 will bring the best out of me and also new recipes and concepts to share with you guys.

Ingredients

Fresh Pasta

  • 200g all purpose flour
  • 2 eggs
  • 50 ml water
  • 25ml oil
  • Pinch of salt and pepper

Prawn and garlic in butter sauce

  • 250g prawn
  • 3 cloves garlic
  • 1 small parsley bunch
  • 50g unsalted butter

Procedure

  1. For the fresh pasta, mix in the flour, eggs, oil, water, salt and pepper until everything is well combined to form a ball.
  2. Knead for 5minutes, cover and allow to rest for one hour
  3. After resting, take a small portion of the dough and roll until the thickness of a sheet; using a pasta machine is faster and easier. Once rolled out, cut into large strips or pass through the pasta machine if it has the cutter option.
  4. Allow to dry onto a pasta rack or even shape the strips into a small ball.
  5. Boil the pasta into a pot of hot water with a sprinkle of salt and some oil. It should be al-dente when ready; firm to the bite.
  6. While the pasta is boiling, sautée the prawn and garlic into the butter. Add in the boiled pasta, sprinkle with chopped parsley and season. Toss well and serve hot.
